100 Young Hens Join Our Flock – and Their Eggs Are a Treat!

This August, we welcomed 100 young hens to the Joy Farms flock. After settling into their new home across the Surrey Hills’ chalky grasslands, these hens have started laying, giving us a special batch of eggs known as pullet eggs.

So, what exactly are pullet eggs, and why are chefs so keen on them? Pullet eggs come from young hens just beginning to lay. They’re slightly smaller than standard eggs, but don’t let their size fool you — they pack a punch in flavour. With rich, golden yolks and delicate whites, pullet eggs are prized for their texture and taste, making them perfect for baking, sauces, omelettes, and fine cooking where every detail counts.

At Joy Farms, our pullet eggs are produced by free-ranging, traditional-breed hens, enjoying more space, varied pasture, and slower laying cycles. This care shows in every egg, with the depth of flavour and quality that only heritage breeds can provide.
